This text is about the most versatile recipe of the Christmas dish. It can play the role of principal, filler and garrison. It even transcends the festivity and is consumed all year round, with its variants included.</p>
<p>Chicken salad is the perfect accompaniment to any Christmas dish. It has its origins in the humblest fires of the Caracas of the red roofs and although its date of creation is not exact, the scholars of the matter assure that it is located at the beginning of the 40s.</p>
<p>A good chicken salad should be firm, that when served with a ladle does not crumble and can be molded. Its preparation is very simple only require potatoes, carrots and chicken, although there are other variants that respond to the taste of each and in some cases to the gastronomic tradition of the region.</p>
<p>The dressing should be generous, but not exaggerated, and can be decorated with a sprig of parsley. It is important to serve it cold but not frozen so that it contrasts with the hallaca and the pernil. Traditional and emblematic, it is a cult dish for Venezuelans, on festive occasions, family dinners and Christmas celebrations. Without a doubt, preparing it must be in the repertoire of each kitchen.</p>
