The black roast is one of the most representative dishes of Venezuelan cuisine, and is one of the four main protagonists in the Venezuelan Christmas table (black roast, hallaca, ham bread and chicken salad). With strong Venezuelan roots, the black roast has a very own style when sealing the piece of meat, to the point of almost burning, in "papelon" melted in hot oil.
