Para producir panela o papel\u00f3n, el jugo de ca\u00f1a de az\u00facar es cocido a altas temperaturas hasta formar una melaza bastante densa, luego se pasa a unos moldes en diferentes formas principalmente prisma rectangular o casquete esf\u00e9rico en donde se deja secar hasta que se solidifica o cuaja. El papel\u00f3n tambi\u00e9n es producida en algunos pa\u00edses asi\u00e1ticos como la India y Pakistan donde se le denominan gur o jaggery.<\/p>\n<p>El Papel\u00f3n\u00a0 es un ingrediente importante en la\u00a0gastronom\u00eda de Mesoam\u00e9rica, Brasil, Colombia, Per\u00fa, Venezuela, Ecuador y de las Islas Canarias, en especial de la isla de la Palma, donde se denomina rapadura. Se utiliza para la elaboraci\u00f3n del melado o\u00a0<em>miel de panela<\/em>\u00a0(una especie de caramelo), que es base de muchos postres y dulces tradicionales.<\/p>\n<p>El Papel\u00f3n\u00a0 tambi\u00e9n se utiliza para elaborar bebidas, como el\u00a0<em>aguapanela<\/em>,\u00a0<em>papel\u00f3n con lim\u00f3n<\/em>\u00a0or\u00a0<em>aguadulce<\/em>, bebida tradicional de Colombia, Venezuela y Ecuador, que se prepara dejando disolver un bloque de panela en agua hirviendo, al que luego se le agrega\u00a0lim\u00f3n, para su posterior consumo ya sea en fr\u00edo o caliente. Otra bebida que se hace a partir de la panela es cierta variante del guarapo, que es una bebida alcoh\u00f3lica producto de la fermentaci\u00f3n alcoh\u00f3lica del agua de panela.
